Dana – I can’t imagine making these with anything other than coconut, but crushed almonds comes to mind as a possible substitute.
I do understand your dilemma, though. My husband used to say that he was allergic to coconut because he really cannot tolerate the taste of it. I think some people really do have an intense reaction to the taste of coconut.
If you try this with crushed almonds, let me know how it turns out. God bless!

These sound yummy and although I am as far from being a baker as the east is from the west, I would like to try them…however, I recoil at the coconut – is there a substitute for this? (excuse my ignorance…I’ve tried to overcome it but have given up). Thanks, Dana
